Trestle Thirty One Dry Riesling 2023 from the Finger Lakes
Trestle Thirty One Dry Riesling 2023 combines the freshness of the Finger Lakes with the texture and complexity that define Nova Cadamatre’s winemaking. The blend brings together 95% Riesling from Dalrymple Vineyard and 5% from Gibson Vineyard. Trestle Thirty One made only 101 cases.
A classic Finger Lakes vintage
The 2023 growing season began with an early budbreak. A hard freeze in late May challenged many vineyards, while frequent rain followed during June and July. However, the weather improved from mid-August onward. A long autumn then helped the grapes develop classic cool-climate fruit while retaining their lively natural acidity.
Two fermentations create texture and precision
The winemaking team gently destemmed and pressed the grapes. After cold settling, Nova fermented the Dalrymple Vineyard portion in stainless steel with Epernay II yeast. Meanwhile, the Gibson Vineyard fruit fermented naturally in an acacia barrel.
After six months, Nova blended the two components and continued aging the wine on its lees. This approach adds texture without sacrificing clarity or freshness. Trestle Thirty One bottled the wine in June 2024 and matured it for another 12 months in bottle before its June 2025 release.
Tasting profile
White flowers, pear and white peach lead the aroma. Green apple, lime and crushed stone add freshness and mineral detail. On the palate, the wine feels concentrated yet graceful, with bright acidity and a gently rounded texture.
Five grams per liter of residual sugar balance the natural acidity, although the wine still tastes distinctly dry. A saline, mineral character carries through the long and remarkably light finish.
James Suckling awarded the wine 94 points, while Wine Advocate gave it 91 points.
Serving and food pairing
Serve Trestle Thirty One Dry Riesling 2023 at 8–10°C. It pairs beautifully with oysters, scallops, sushi, grilled fish and fresh goat cheese. Its acidity also works well with schnitzel, roast pork and mildly spicy Asian dishes.
Enjoy it now for its vibrant fruit and freshness. Alternatively, cellar it for several years as the citrus and floral notes develop greater savory and mineral complexity.
