We proudly present the 2019 Côtes de Tablas from Tablas Creek Vineyard, located in the Adelaida District of Paso Robles, California. This wine represents the estate’s signature Rhône‑style program: a blend of 44% Grenache, 30% Syrah, 17% Counoise and 9% Mourvèdre, grown on regenerative‑organic and biodynamic estate vineyards.
The 2019 growing season began with generous winter rainfall that delayed bud‑break and led to a cool early summer. From mid‑July onward the temperatures rose steadily without surrendering the vines’ balance. The harvest produced fruit with both depth and freshness.
All varietals were fermented separately using native yeasts in a mix of stainless steel and upright wood fermenters. After pressing the wine was blended in June 2020 and aged for one year in 1 200‑gallon French oak foudres. It is bottled unfined and unfiltered.
On the nose expect bright aromas of sugar‑plum, red licorice and subtle wild herb. On the palate vibrant red cherry and currant fruit combine with peppery spice, graphite and chalky tannins. The finish is long, poised and will age gracefully for a decade or more.
Suggested pairings: grilled steak, braised short ribs, rich pasta with sausage, or a tomato‑based cassoulet. Serve at 16‑18 °C and decant for 30 minutes if enjoyed in its early years.
