At americanwine.club, we’re excited to present the non-vintage Tradition by Michael Cruse: The Cruse Wine Co. Tradition NV is a handcrafted sparkling wine that channels old-world technique through a distinctly Californian lens. This bottle speaks volumes. It combines depth, freshness, and textural precision in a way few domestic bubblies achieve.
The Cruse Wine Co. Tradition NV blends 70% Chardonnay with 30% Pinot Noir, sourced from select vineyard sites across California. After harvest, the grapes were pressed using a traditional Champagne cycle and fine press cut. Fermentation occurred naturally, both primary and malolactic, in barrels and upright wooden tanks. A small 6.5% portion of reserve wine was added to the blend, providing additional dimension. Notably, Cruse chose to avoid sulfur during élevage and bottled the wine without dosage, letting the fruit and terroir shine with clarity and tension.
In the glass, expect a complex aromatic profile: honey, beeswax, and ripe pear lead, followed by layers of crème anglaise, melon rind, and just-ripe berries. On the palate, a creamy core meets vibrant acidity, keeping everything balanced and alive. A clean, mineral spine carries the finish — long, electric, and full of energy.
This sparkling wine pairs beautifully with food. Try it with creamy seafood pastas, roasted chicken, or soft-ripened cheeses. Serve well-chilled at 10–12 °C, and allow it a few minutes in the glass to fully express its character.
