The 2019 Côtes de Tablas from Tablas Creek Vineyard captures the spirit of the estate’s Rhône-style tradition. Grown in the limestone-rich hills of Paso Robles’ Adelaida District, this blend of 44% Grenache, 30% Syrah, 17% Counoise, and 9% Mourvèdre reflects both power and precision. All fruit comes from the estate’s certified organic and biodynamic vineyards, farmed with regenerative intent.
The vintage began with generous winter rainfall, which delayed budbreak and led to a cool spring. By mid-July, temperatures began to rise steadily, allowing the fruit to ripen evenly and maintain freshness. Each grape variety fermented separately with native yeasts, either in stainless steel or upright wooden tanks. The finished blend came together in June 2020 and matured for one year in large 1,200-gallon French oak foudres. The wine was bottled without fining or filtration.
From the first swirl, it offers aromas of red cherry, sugar-plum, and wild herbs. On the palate, bright red fruit meets peppery spice, graphite, and a touch of chalky tannin. The finish lingers with elegance and energy, promising at least a decade of graceful aging.
